Shortly after implementing the Keto diet for Mr. Embellishology, he had a craving for my no bake cookies. Instead of resorting to Pinterest, I decided to adapt my original Old Fashioned No Bake Cookie recipe. To my surprise, it worked the first time!
The thing I liked about making this keto version is that I didn’t have to freeze them to get them to set up. In the typical no bake cookie recipe, you have to simmer the ingredients together for the sugar to dissolve and so the mixture will thicken and harden. I did the same thing with this version and I was so excited that they set up as they cooled.
Easy Substitutions
If you don’t like coconut (like me), you can leave it out and add more nuts. Don’t like almonds? Use chopped pecans or macadamia nuts instead! This recipe really is versatile. Just remember that the nutritional info will change with substitutions.
Keto No Bake Fat Bomb Cookies
- 1 Stick Butter
- 1 c Swerve Sweetener
- 1/4 c. Heavy Cream
- 2 Tbsp Unsweetened Cocoa
- 1/4 c + 2 Tbsp Natural Peanut Butter (or other nut butter)
- 1/4 c Unsweetened Shredded Coconut
- 1/2 c Chopped Almonds
- 1 tsp Pure Vanilla Extract
- In a saucepan, mix butter, sweetener, heavy cream and cocoa on medium-high until it comes to a boil. Boil for 1 minute, stirring constantly.
- Remove from heat and stir in vanilla.
- Next, stir in peanut butter until mixed well then add chopped nuts and coconut.
- With a teaspoon or small cookie scoop, drop onto waxed or parchment paper and allow cookies to set (about 30 minutes to 1 hour).
- Store in a sealed container.
