With this Keto Meal Plan, I hope to make it easier for those who are wanting to get started or maybe struggling with the Keto lifestyle. In the beginning it can be quite a challenge to figure out what you can and can’t eat. These meal plans are simple and will include links to recipes (if available).
As a family, we typically all eat the same thing. However, I may add or sub certain things for my girls as I do not feel they need to be on a strict keto diet. I also, do not do strict keto ( I discovered I don’t do well on strict keto) but I am much more conscious of what I eat and eat keto/low carb most of the time. I do try to keep our meals as clean as possible.
Keto Meal Plan Week 2
Sunday – Pot Roast with radishes, carrots and green beans
*Since discovering that radishes can be subbed for potatoes in some recipes, it’s been a game changer! The texture is pretty much the same and they take on the taste of whatever you cook them with!
Monday – Chicken & Dumplings with Keto Biscuits
*I will be tweaking my recipe for chicken & dumplings to make it keto friendly. However, I will make regular dumplings for my girls.
Tuesday – Taco Salad
Wednesday – Eggroll in a bowl
*My girls absolutely love this (which shocks me a little)! I don’t have any ground pork so I will be using ground beef instead. You can use bagged coleslaw mix but I prefer fresh cabbage. Also, if you haven’t tried coconut aminos, you are missing out…..SO much better than soy sauce (and better for you!), just sayin.
Thursday – Chicken Carbonara with roasted broccoli
*I haven’t made this before so we’re trying something new!
Friday – Pizza night!
*We have leftover take-out pizza in the freezer from last week that I will warm up for the girls. James and I will have a Fathead pizza.
Saturday – Sheet pan chicken fajitas
*This is such an easy meal. Just throw everything on a rimmed cookie sheet and bake until chicken is done.
Keto/Low Carb Breakfast
Mr. Embellishology and I usually skip breakfast (intermittent fasting) so I don’t include it in our meal plan. If there is a day that we want breakfast, it’s usually eggs and bacon or sausage. Occassionally, I’ll make some low carb waffles. If we have waffles, he will make a breakfast sandwich.
Keto/Low Carb Lunches
For lunches, we usually eat leftovers. I keep lunchmeat and low carb tortillas on hand for wraps if we don’t have leftovers.
